As part of this year's Tasting Australia, Adelaide Festival Centre is set to celebrate Australia's first flavours at The Red Gum Dinner.
Diners will join legendary Bundjalung chef Mark Olive, acclaimed star of The Outback Cafe and celebrity judge on The Chef's Line, in a culinary and cultural journey on the banks of the Karrawirra Parri (River Torrens) in the Adelaide Festival Centre Banquet Room on Saturday 3 May.
Mr Olive will showcase his foodie expertise through a four-course dinner celebrating Australia's first flavours.
In the spirit of Mr Olive's Sydney Opera House restaurant, Midden, the menu for The Red Gum Dinner draws on his fusion of native ingredients with contemporary cuisine, where each dish pays homage to both the land and culture.
"I can't wait to share the incredible flavours of our Australian native cuisine with Munda Wines and special performances at The Red Gum Dinner at Adelaide Festival Centre as part of Tasting Australia," he said.

Joining Olive on the night and complimenting this unique dining experience will be Munda Wines director and Wirangu and Kokatha man, Paul Vandenbergh.
Together with Mr Olive, Mr Vandenbergh will guide diners through pairings, with the two sharing stories of the origin and culture of their produce.
Munda Wines is an Indigenous owned wine business which celebrates Country, culture and storytelling through premium Australian wines.
Each bottle connects to the land and its Traditional Custodians, sharing the deep histories and identities of First Nations people.
Munda Wines director, Paul Vandenbergh said he is looking forward to the dinner.

The Red Gum Dinner will celebrate exceptional food and wine, arts and entertainment for one special night at Adelaide Festival Centre, with both menu and entertainment details to be announced in the coming months.
The Red Gum Dinner will be held on Saturday 3 May at the Adelaide Festival Centre, Banquet Room from 6pm.
