Indigiearth partners with Three Tails Brewery to launch native-inspired beer

An Australian brewery has teamed up with award-winning native food business Indigiearth to create a new beer which celebrates native Australian ingredients.

Three Tails Brewery, based on Wiradjuri Country in Mudgee, has released a Lemon Aspen Sour Pale in collaboration with Indigiearth, using native lemon aspen and wild-foraged yeast to place Australian bush food at the heart of the brew.

The can's design features hand-drawn artwork of the lemon aspen fruit against a vibrant yellow backdrop, created by Indigiearth founder Sharon Winsor.

The Ngemba Weilman woman says it's "exciting to see native ingredients being embraced and utilised in many different ways".

"I've been in business in the native food space commercially for 29 years, sharing knowledge and culture through our food and botanicals," Ms Winsor said.

"Native ingredients have always been here, and we want everyone to embrace the beauty of what Mother Earth provides in its natural form."

Indigiearth works directly with First Nations growers and communities, combining sustainable, ethical sourcing with cultural heritage and traditional land practices. Their goal is to support and grow the native food industry while keeping cultural knowledge at its centre.

Often called a rainforest lemon, lemon aspen is a citrus fruit native to Far North Queensland. The new beer combines its sharp, tart flavour with hints of eucalyptus, grapefruit and honey.

It also uses wild yeast sourced from the Illawarra and organic malt from the Riverina's Voyager Craft Malt.

Three Tails co-owner Kerrie Abba said the brewery is "incredibly proud" to work with Indigiearth — a beloved local business — on a beer that reflects the region's identity and native flavours.

"Our collaboration beers have now become part of the Three Tails' DNA," she sai.

"Showcasing everything we love about being a boutique brewery — our ability to innovate, collaborate and highlight incredible produce."

The Lemon Aspen Sour Pale Ale is available at Three Tails Brewery and select Central West NSW suppliers.
